Effect of Temperature on the Dehydration of the Pulp of Three Ecotypes of the Species Mauritia Flexuosa (Aguaje), on the Antioxidant Capacity, Total Polyphenols, and Anthocyanins of the Oil Extracted by Cold Pressure, Ucayali-Perú

Abstract

For the extraction of oil by cold pressure, the pulp is previously dehydrated, this being a component susceptible to temperatures. The effect of temperature was evaluated (T1 = 50 ºC and T2 = 60 ºC) of dehydration of the pulp of three ecotypes of aguaje (amarillo, ponguete, and shambo) on the antioxidant capacity, the content of total polyphenols and anthocyanins in the oil extracted by cold pressure. A completely random design was used, with factorial arrangement, and then the variables were subjected to an analysis of variance with significance level of (p<0.05) where it is indicated that there is a difference between the three levels of ecotypes and two levels of temperature: with respect to the content of antioxidants, total polyphenols, and anthocyanins, confirming this significance with Tukey’s multiple mean comparison analysis. The anthocyanin content for the ecotype (amarillo) with a temperature of 50 ºC (2.07 mg/100 g). The ecotype (ponguete) with dehydration temperature of 50 ºC has a higher value in antioxidant capacity carried out by the ABTS method (55,705.9 μmol trolox/100). The total content of polyphenols was the ecotype (shambo) at a temperature of 50º (30.1 mg EAG/100 g).
